So Good Cajun French Fries and Dip

Delicious Dip:
2 parts (or 1/4 cup) pre-baked, unspiced pumpkin puree
1 part (or 1 1/2 tablespoons) Bussellsprouts Fiesta Spice spread
dash pumpkin pie spice
dash salt

Fabulous Fries:
1/4 Celeriac Root, jullienned, or 1 Medium Potato, julienned
1 part smoked paprika (or 1 tablespoon)
1 part Basic Fry seasoning (equal parts, or 1 tsp each, sea salt, black pepper, fennel, and onion powder)
1-2 tablespoons heritage bacon drippings, or coconut oil, or olive oil

Melt oil in microwave or over double-boiler, combine with fabulous fry seasonings coat well, and stick in oven at 400 degrees. Bake for 15 minutes, stir, then bake for an additional 15 minutes.

Meanwhile, heat the pumpkin puree till it steams then whip together the pumpkin puree, Fiesta Spice, and seasonings either by hand, or in a food processor. Serve, and be prepared for a delicious and filling punch of spicy!

 

Oh So Simple Scalloped Potatoes
This recipes is all gluten free and dairy free, but you can use any type of butter or milk product for your sauce.

Ingredients:
2 tbsp Dairy Free Butter (I use Earth Balance)
1 tbsp GF/DF flour
1 cup rice milk
1 jar of favorite Oh So Simple Cashew Cheeze Spread (I use Original flavor)
pinch salt
pinch pepper
1 onion
1 clove garlic
5 large potatoes (Yukon gold, russet are my favorites)

Set Oven to 350.

Directions:

1. Cut onion and brown and set aside.

2. Slice the potatoes on a mandolin or food processor with a julienne blade to make sure your slices are even and set aside.

3. Start by melting butter and put flour in pan.  You want to cook the flour until it has a toasty aroma, careful not to burn.

4. Then, slowly add your rice milk stirring constantly.

5. Once ingredients are combined, add the Oh So Simple  Original Cashew Cheeze Spread, then salt and pepper to taste (if mixture is too thick add water to thin so the cream sauce pour easily).  Mixture should be the consistency of an Alfredo sauce.

6. Butter the bottom of your dish and begin layering with potatoes, then add a thin layer of caramelized onions and top with cream sauce.  Repeat for as many layers as you desire (I do three).

7. Before adding the  last layer of cream sauce, you can add some Fiesta or Turkish Oh So Simple Cashew Cheeze Spread to the mixture to give the appearance of cheddar cheese.

8. Bake in oven about 30-45 minutes or until potatoes are soft when poked with a fork.  Time may vary based on thickness and oven.
